Our Favorite Chicken Recipe: Oven Roasted with Lemon, Garlic, and Herbs

We are asked all the time for our favorite chicken recipe, and we always come back to the simple method of oven roasting with butter, garlic, lemon, and herbs. It is a minimalist recipe that is also incredibly easy. Follow the instructions below and we guarantee you will be delighted with the results!

Ingredients:

  • Whole pasture-raised chicken
  • 1/3 cup butter at room temperature
  • Salt & pepper
  • 1 lemon
  • 1 garlic clove, peeled and crushed
  • Herbs such as rosemary or thyme

Instructions:

Preheat the oven to 450°F. Rub the butter all over the chicken with your hands. Place the chicken into a roasting pan. Season with salt and pepper and the juice from the lemon. Place the herbs and garlic inside the cavity, along with the squeezed-out lemon halves. 

Roast the chicken in the oven for about 15 minutes. Baste, and then adjust the temperature down to 375°F and roast for about another 45 minutes. Total cooking time should be about 15 minutes per pound of chicken. 

The end result should be golden brown, crispy looking skin and a nice amount of richly-colored juices in the bottom of the pan. 

Turn off the oven and crack open the door, allowing the bird to rest for about 15 more minutes. This helps retain the juices in the meat and makes carving much easier. 

And that’s it! The juices in the pan make for a delicious gravy, and you can even add in the herbs and garlic from the cavity for some extra taste.
